সুন্দরবনের মধু

সুন্দরবনের মধু বিশ্ব বিখ্যাত। বাংলাদেশের সবচেয়ে জনপ্রিয় মধু হল সুন্দরবনের মধু। জনপ্রিয় হবার কারন হল এই মধুর ঘ্রাণ ও স্বাদ একেবারেই অতুলনীয়। সুন্দবনের মধু এখন দেশের সীমান্ত পেরিয়ে রপ্তানি হচ্ছে বিদেশে। শুধু রপ্তানিই নয়, বিদেশে বেশ সুনামও অর্জন করেছে। আমাদের সুন্দরবন পৃথিবীর বৃহত্তম ম্যানগ্রোভ বন। সুন্দরবনে খলিশা, গরান, কেওড়া, বাইন প্রভৃতি গাছ রয়েছে। এই উদ্ভিদের ফুল থেকে আহরিত মধু অন্য যে কোন মধুর থেকে ভিন্ন স্বাদ এবং সুগন্ধযুক্ত। এই সুন্দরবনের মধু সবচেয়ে ভালো। তাই ধীরে ধীরে সুন্দরবনের মধু সারা বিশ্বে খ্যাতি পেয়েছে।

অনেকে মনে করেন, সুন্দরবনের মধু মানেই মিশ্র ফুলের মধু। আসলে, এটি সম্পূর্ণ সত্য নয়। সুন্দরবনে প্রধানত ৪টি ফুল থেকে মধু উৎপন্ন হয়। খলিশা, গরান, কেওড়া ও বাইন। এই গাছের ফুল থেকে মধু সংগ্রহ ফেব্রুয়ারি মাসে শুরু হয় এবং জুন মাসে শেষ হয়। এ সময় সুন্দরবনের মধু বেশির ভাগ সংগ্রহ করা হয়।

এছাড়া সারা বছর কিছু ফুল ফোটে এবং তা থেকে মধু সংগ্রহ করা হলেও তা খুবই কম। বাংলাদেশে প্রতি বছর উৎপাদিত মোট মধুর প্রায় ২০% সুন্দরবন থেকে সংগ্রহ করা হয়।

যেহেতু মধু বিভিন্ন ফুল থেকে সংগ্রহ করা হয়, তাই মধুর স্বাদ, গন্ধ এক নয়। এই বিষয়গুলো নিয়ে আমরা প্রায়ই আমাদের গ্রাহকদের সাথে সমস্যায় পড়ি। অনেকেই বিষয়টি বুঝতে চান না।

সুন্দরবনের মধু খাঁটি না ভেজাল তা বোঝার জন্য  জানতে হবে এই  মধুর বৈশিষ্ট্য কী? বৈশিষ্ট্যগুলো জানলেই বুঝবেন মধু খাঁটি না ভেজাল।

সুন্দরবনের প্রাকৃতিক Raw মধুর ৬টি বৈশিষ্ট্য:

১.  সাধারণত হালকা অ্যাম্বার রঙ এর হয়, তবে সময় এবং ফুলের উপর নির্ভর করে কিছুটা হালকা বা গাঢ় অ্যাম্বার রঙ এর হতে পারে।

২.  খুব সুস্বাদু, হালকা টক ও হালকা মিষ্টি।

৩. কিছু মানুষের কাছে- সুন্দরবনের মধুর স্বাদ আখের রসের মতো লাগে।

৪. মধুর ঘনত্ব সবসময় পাতলা হবে মানে বি গ্রেড বা সি গ্রেড এর হয় (আমরা সুন্দরবনে কখনও ঘন মধু পাইনি)।

৫.  সুন্দরবনের মধুর একটি বৈশিষ্ট্য হল এটি অল্প ঝাঁকানোর পর অনেক ফেনা হয়, মধু যত পাতলা হয় ফেনাও তত বেশি হয়।

৬. আমরা কখনো সুন্দরবনের র মধু জমতে দেখিনি। সেটা ফ্রিজের ভিতরে হোক বা বাইরে।

বাংলাদেশে সুন্দরবনের মধু কখন এবং কিভাবে সংগ্রহ করা হয়?

ম্যানগ্রোভ বন সুন্দরবনের মধু উৎপাদন মৌসুম সাধারণত মার্চের শেষ থেকে জুন পর্যন্ত। এ সময় সুন্দরবনে অনেক ধরনের ফুল ফুটতে দেখা যায়। প্রকৃতিতে অনেক ধরনের ফুল থাকলেও মৌমাছিরা চারটি প্রধান ফুল থেকে উল্লেখযোগ্য পরিমাণে মধু সংগ্রহ করে। আর সেগুলো হলো- খালিশা, গরান, কেওড়া ও বাইন। মৌমাছিরা এ সময় সুন্দরবন থেকে যে মধু সংগ্রহ করে তাকে আমরা সুন্দরবনের মধু বলি।

The honey of happiness is now being exported to the borders of the country. Not only exports, but also gained considerable reputation. Our Sundarbans are government standard grove forests. Sundarbans have trees like Khalisha, Garan, Keora, Bain etc. The honey extracted from the flowers of this plant has a different taste and aroma than any other honey. This Sundarban honey is the best. Honey is produced mainly from 4 flowers in Sundarbans. Khalisha, Garan, Keora and Bain.

The collection of honey from the flowers of this plant starts in February and ends in June. At this time most of the honey of Sundarbans is collected. Besides, some flowers bloom throughout the year and honey is collected from them but very little. About 20% of the total honey produced in Bangladesh every year is collected from the Sundarbans. Since honey is collected from different flowers, the taste and smell of honey are not the same. We often run into problems with our customers on these issues. Many do not want to understand this. To understand that the honey of Sundarbans is pure and not adulterated, you need to know what are the characteristics of this honey? 6 properties of natural raw honey from Sundarbans:

1. Usually light amber in color, but can be slightly lighter or darker amber depending on time and flower.

2. Very tasty, mildly sour and mildly sweet.

3. To some people- Sundarbans honey tastes like sugarcane juice.

4. Honey density will always be thin ie B grade or C grade (we never got thick honey in Sundarbans).

5. One characteristic of Sundarbans honey is that it foams a lot after a short shake, the thinner the honey, the more foam.

6. We have never seen honey from Sundarbans. Be it inside or outside the fridge.

When and how is the honey of the Sundarbans collected in Bangladesh?

The honey production season of mangrove forest Sundarbans is usually from late March to June. Many kinds of flowers can be seen blooming in Sundarbans at this time. Although there are many types of flowers in nature, bees collect significant amounts of honey from four main flowers. And they are – Khalisha, Garan, Keora and Bain. The honey that the bees collect from the Sundarbans at this time is called Sundarbans honey.
